You can’t tell me having a good, healthy(ish), hearty breakfast doesn’t just make you feel complete like you can tackle anything for the day. Combine it all together and you have the best breakfast ever, Cheesy Potato Breakfast Casserole…Plus it’s kid friendly!
The combination of some of the most popular breakfast ingredients makes this cheesy potato breakfast casserole one of a kind. There are several dishes that it may look like, but the taste is truly unique! It warms you from the inside out and you will be back for more.
I grew up eating breakfast casserole and it was always something made on MOST holiday mornings. We made ours a little differently though. So, here is my spin on a little childhood memory. I hope you have fun making memories of your own in the kitchen and enjoy this delicious recipe!
Before you begin your cheesy potato breakfast casserole journey, my biggest tip will be to make this a day ahead. It is ALWAYS better the next day!
Start by prepping your ingredients! Preparation will always make your time in the kitchen faster

Recipe Substitutions/Add ons
- add onions into ground sausage and cook
- add peppers and onions into ground sausage and cook to make more southwest
- use tater tots instead of diced potatoes
- use sliced bread instead of potatoes
- add 2-3 extra eggs for a richer casserole
- make vegetarian by replacing sausage with spinach, mushrooms, onions and diced tomato

Cheesy Potato Breakfast Casserole
Equipment
- sautee pan
- mixing bowl
- colander
- spatulas
- oven
- whisk
- 9×13 casserole dish
Ingredients
- cooking spray
POTATO LAYER
- 24 oz southern style diced hash brown potatoes
- 1 tbsp garlic powder
- 1 tbsp parsley flakes
- 1 tbsp black pepper
- 1 tbsp salt
EGG MIXTURE LAYER
- 8 lg eggs
- 1 tbsp yellow mustard
- 1 c milk
- 2 tsp pepper
- 2 tsp salt
- 1 tsp garlic powder
- 2 tsp parsley flakes
MEAT LAYER
- 1 lb country sausage mild or hot (depending on taste)
- 1 tbsp oil
- 8 oz sharp cheddar cheese fine shredded
Instructions
- preheat oven to 375°
- Heat oil over medium high heat and add ground sausage. Cook until brown and crumbled.
- While sausage is browning, combine all ingredients for egg mixture layer and set aside
- Drain, rinse, and set aside sausage
- spray 9×13 casserole dish with cooking spray
- spread potatoes in a single layer, then sprinkle all seasonings for potato layer evenly across top
- evenly distribute cooked sausage over top of potatoes
- sprinkle cooked sausage layer with shredded cheese
- pour egg mixture over the entire casserole making sure to saturate all the cheese
- bake for 35 minutes until edges are brown and egg is no longer runny
- allow to sit 15 minutes before cutting/serving

Yes! That would be so delicious! If you look at my previous blog about the burrito bowls I talk about a meat substitute. In that blog I added in Turkey meat, but you can always leave it out! That method would work great!
